Arctic Bloom A study in texture, control, and quiet refinement. Story The intention was simple: to create a cocktail that pours white, soft, and cloud-like—a visual contrast to the bold and expressive drinks that often define the bar. But simplicity revealed complexity. Citrus and coconut, while harmonious in flavour, naturally resist each other in structure. Early versions of this drink would split, losing the elegance it was designed to embody. Through refinement, the answer was found not in altering the flavour, but in mastering technique. A controlled dry shake initiates emulsification, followed by a secondary shake with ice to stabilise and integrate. The result is a texture that is silken, cohesive, and intentional. Theatre Element Using a flavour blaster: Form a smoke bubble over the surface Drop the freeze-dried lychee through the bubble to burst A moment of contrast. like ice cracking open to reveal what’s beneath. Tasting Notes Aroma Fresh mint and lifted citrus, layered with soft lychee florals. Palate Silky and balanced. Coconut provides a smooth, rounded body Lemon adds precision and brightness Lychee brings gentle sweetness and floral depth Gin anchors the structure with subtle botanicals Finish Clean, lightly tropical, with a cooling herbal lift. Texture & Experience Cloud-like and seamless. A fully integrated emulsion that delivers softness without weight. Club Note (See Techniques Library ) Citrus and coconut can naturally separate due to acidity disrupting the fat structure. This is resolved through controlled emulsification, beginning with a dry shake to bind the components, followed by a second shake with ice to stabilise the texture.

Luna Light The evolution of a moment. Born of the vibrant energy of the Luna Blue, this expression moves away from nostalgia toward refinement. Where the original captured the ocean in colour, Luna Light captures it in feeling, clean, bright, and effortlessly elevated. This is not a reinvention. It is a continuation, with intention. Concept & Story If Luna Blue was the scene, Luna Light is the moment that follows. The crowd fades. The air cools. And above it all, the moon reaches its full brightness. Standing along the coastline of Port Melbourne, there’s a stillness that settles in. The sound of crashing waves continues in the distance, rhythmic, grounding, while the full moon casts a soft, luminous glow across the water. That is the moment this drink captures. Not the energy of the day, But the clarity of the night. The transformation began with a simple question: How do you elevate without losing identity? The answer came through restraint. By replacing blue curaçao with Cointreau, the drink shed its bold visual in favour of a more refined citrus profile. Clarifying the grapefruit juice with pectinase removed its opacity, leaving behind a crystal-clear structure, light, precise, and almost luminous in appearance. What remains is something quieter, more intentional. Luna Light reflects: The glow of a full moon over open water The sound of waves breaking in the distance The calm that follows movement The beauty of clarity after complexity This is Luna, at its brightest. Tasting Notes Aroma Delicate citrus oils rise first, led by orange and mandarin, followed by soft floral notes of lychee and a gentle freshness from mint. Palate Clean, lifted, and elegantly structured. Clarified grapefruit delivers a smooth, refined citrus backbone without heaviness Cointreau introduces precise, bright orange complexity Mandarin adds a soft, rounded sweetness Lychee brings a gentle floral balance Vodka provides clarity and structure without interference Lemon sharpens the profile with a fine, polished acidity Finish Silken and refreshing. A clean citrus line lingers, fading into a light floral sweetness with a crisp, luminous edge.

Luna Blue The Luna Blue was born under open skies, poolside, overlooking the coastline of Port Melbourne. This drink is the origin point of what would later become Luna Light, a more refined, elevated expression. The Luna Blue remains: the beginning of the story. Concept & Story Its colour wasn’t designed, it was observed The reflection of the pool, merging with the ocean beyond, the waves creating the white foam, created a seamless tone of blue that felt almost unreal. That moment became the drink. This cocktail captures that memory: The stillness & rattle of sea water The glow of rooftop light The quiet energy of summer nights Over time, it has evolved into the Luna Light (see next cocktail recipe), refined in balance, elevated in structure, but always holding on to its origin. The Luna Blue is not just visual. It is a preserved moment in liquid form. Tasting Notes Aroma Bright citrus oils lead, followed by soft tropical sweetness from lychee and a fresh herbal lift from mint. Palate Vibrant and refreshing. Grapefruit provides a slightly bitter, juicy backbone Blue Curaçao adds citrus sweetness and colour depth Lychee rounds the drink with soft floral sweetness Vodka keeps the structure clean and focused Lime tightens the profile with crisp acidity Finish Light, refreshing, and slightly tropical. Clean citrus lingers with a soft floral echo.

Birrarung Mist A cocktail that feels like standing on the banks of the Yarra at sunrise, quiet, grounded, and deeply Australian. Concept & Story “Birrarung” is the original name for the Yarra River, given by the Wurundjeri Woi Wurrung people, meaning “river of mists and shadows.” This cocktail is a tribute to that stillness. The moment just before the city wakes. The soft fog rising off the water. The subtle connection between land, botanicals, and culture. Instead of overpowering flavours, Birrarung Mist leans into restraint, letting native ingredients speak with elegance and clarity. It’s not just a drink, it’s a sensory pause. You’re not drinking for intensity. You’re drinking for presence. Tasting Notes Aroma Delicate and herbaceous on the nose. The saltbush introduces a gentle saline minerality, like ocean air drifting inland-layered with soft citrus lift from the lemon myrtle tea. There’s a subtle floral whisper from the vermouth that rounds it out. Palate Silky and refined. The Bass & Flinders Gin anchors the drink with clean, structured botanicals, allowing the native elements to weave through without competition. Saltbush brings a savoury, almost umami edge Lemon myrtle offers bright, zesty citrus cleaner and more lifted than lemon peel White vermouth softens and binds, adding gentle sweetness and aromatic complexity The overall profile is light, soft, and ethereal, with a subtle coastal character. Finish Crisp, slightly saline, and lingering. A quiet citrus echo remains on the palate, leaving a refreshing, almost meditative aftertaste.
